Operational requirements before expensive decisions are fixed

We translate the concept and menu into operational requirements for layout, kitchen, bar, storage, dishwashing, equipment and staff flow. The aim is to make the finished premises work during a busy service, not simply to approve a drawing.

Early involvement matters because changes to drainage, ventilation, electricity, gas and fixed equipment are cheaper before they are installed. We trace ingredients, staff, service and dishes through the premises to identify crossing traffic, long distances, missing workspace and bottlenecks.

Gastroplan coordinates the operational brief and interfaces with architects, suppliers and trades. We are not the contractor and do not perform authorised technical work; the relevant professionals remain responsible for approvals and execution.
